I went online and found a recipe on www.allrecipes.com but tweaked it a little as I didn't have all of the ingredients they suggested. Feel free to try them sometime!
Chocolate Chip Banana Muffins
- 1 3/4 cups flour
- 3/4 cups light brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 3 mashed, ripe bananas
- 3/4 cup semi-sweet chocolate chips (and a few extra to top the muffins with, if you'd like)
- Combine flour, brown sugar, baking powder, soda and salt in a small bowl.
- In a large bowl, combine eggs, oil, sour cream and vanilla.
- Stir in dry ingredients just until moistened.
- Fold in bananas and chocolate chips.
- Fill paper-lined muffin cups 2/3 of the way full and sprinkle a few extra chocolate chips over top.
- Bake @ 350 degrees for 22 to 25 minutes.
- Let cool in the muffin pan for 5 minutes and then remove and place on a wire cooling rack.
